
Ingredients
Butter 100g
Granulated sugar 175g
Brown sugar 75g
Chocolate 125g
Golden syrup 1 Tbsp
Eggs 2
Vanilla extract 1 tsp
Plain flour 100g
Baking powder ½ tsp
Cocoa powder 2 tbsp
Directions
- Heat oven to 180C
- Grease a 20cm cake tin.
- Place the butter, sugar, brown sugar, chocolate and golden syrup in the pan and melt gently on a low heat until it is smooth and lump-free
- Remove the pan from the heat
- Break the eggs into a bowl and whisk with the fork until light and frothy
- Add the eggs, vanilla extract, flour, baking powder and cocoa powder to the chocolate mixture and mix thoroughly
- Put the 1/4 of the mixture into the greased cake tin and layer oreos cover the cookies with the rest of the mixture and add another layer of oreos, press slightly into the batter and place on the middle shelf of the oven
- Bake for 25-30 mins. The center may appear uncooked, this is to be expected. Do not over cook or it becomes a rock
- Remove and allow to cool for 20-30 mins before cutting into wedges and serving
